Ingredients
- 1½ matzos, broken into small pieces
- 2 eggs
- ¼ cup milk
- ⅔ cup corn (drained well if canned)
- ¼ cup chopped green onion
- ½ tsp garlic powder
- Salt and pepper, to taste
- ½ cup grated cheese (cheddar, mozzarella, or any melty cheese)
- Neutral oil, for frying
How to make savory matzo brei
- Break the matzos into small pieces using your hands.
- In a bowl, whisk together the eggs, milk, salt, and pepper.
- Add the matzo, corn, green onion, garlic powder, and cheese. Mix well.
- Let the mixture sit for 10 minutes so the matzo softens and absorbs the liquid.
- Heat a little oil in a pan over medium heat.
- Scoop small portions and shape into fritters.
- Fry for 2–3 minutes on each side until golden and crispy.
- Flip once and avoid moving them too much so they hold together.
Serve warm.

- 2 L eggs
- ¼ cup milk
- ⅔ cup corn, drained
- ¼ cup green onion, chopped

- Salt and pepper, to taste
- ½ cup grated cheese
