Instructions
In a pot, bring the water to a boil, then reduce the heat to a low simmer.
Add the tapioca pearls and cook for 25-30 minutes, stirring every few minutes with a whisk to prevent sticking. Cook until there are almost no little white dots remaining.
Turn off the heat, stir in the sugar, and cover the pot. Let it sit for 15 minutes.
Stir in the coconut milk and let the mixture cool to room temperature (about 1 hour).
Transfer to the fridge and chill for 2-3 hours.
After chilling, the tapioca will thicken. Stir with a whisk and adjust the consistency to your liking by adding more water or coconut milk.
