Instructions
Preheat the oven to 170℃ (335℉).
Mix oats, nuts, seeds, salt, and cinnamon in a large bowl. Add vanilla, coconut oil, and maple syrup. Adjust salt or sweetness if needed.
Spread the mixture on a parchment-lined baking pan.
Bake for 7 minutes, stir, and spread evenly again. Repeat for another 7 minutes, then 5 minutes, and finally 3 minutes (7+7+5+3 minutes total).
Check if the oats are golden. If not, bake for 2-3 more minutes. The oats will crisp as they cool—avoid overbaking.
Mix
in dried fruit while the granola is still warm. Let it cool completely.
Once cooled, store in an airtight container. Add chopped dark chocolate or other mix-ins if desired.
