Ingredients

fresh pumpkin, peeled and finely grated

small onion, very finely chopped or grated

eggs

flour, as needed

cheese (feta, mozzarella, Parmesan — whatever you have)
A handful of fresh herbs, chopped (I used mint, coriander, and parsley)

garlic powder
Salt and black pepper, to taste
Instructions
Grate the pumpkin and squeeze out the liquid.
Add all ingredients to a bowl and mix well.
Heat oil in a pan over medium heat.
Scoop spoonfuls of the mixture into the pan and flatten slightly.
Fry for a few minutes on each side until golden brown.
Transfer to a paper towel-lined plate.
Serve warm with yogurt or as you like.
