Ingredients

pumpkin (peeled, seeded, cut into chunks)

Salt, to taste

raw tahini
Instructions
Heat olive oil in a wide pan. Add pumpkin chunks and sear on high heat until well browned on both sides.
Add water, cover, and cook on medium-high for about 15 minutes, until fork-tender.
Mash lightly, season with salt, and cook uncovered on low-medium for 20 minutes, stirring, until liquid evaporates and pumpkin deepens in color.
Let cool slightly. For every 1 cup of cooked pumpkin, mix in ¼ cup raw tahini (≈½ cup total). Stir until creamy.
Taste, adjust salt, and serve with pita, crackers, veggies, or in sandwiches.
