This green tahini is creamy, fresh, and packed with herbs. Use it as a dip, dressing, or sauce—it’s naturally vegan, gluten-free, and so easy to make. Just blend herbs, water, tahini, lemon, and salt.

Ingredients

cold water

large handful fresh herbs (such as parsley and cilantro)

cup
raw tahini
(use ½ cup for a thinner, drizzle-style sauce)

tbsp
tablespoons fresh lemon juice, or to taste
salt, to taste
Instructions
In a blender or food processor, add the cold water and herbs. Blend until completely smooth and bright green.
Add the raw tahini, lemon juice, and salt. Blend again until smooth and creamy.
Taste and adjust the lemon or salt to your liking.
Spoon into a bowl and drizzle with olive oil. Top with fresh herbs if desired. Serve as a dip or sauce.
