easy avocado salad
with pomegranate, herbs, and radish. Creamy, crunchy, and tangy — perfect for brunch or as a light side dish.

Ingredients

ripe avocado, cut into small cubes (not too small so it doesn’t mush)

small red onion, finely chopped (about ⅓ cup)

small handful fresh herbs – such as chives and cilantro (or parsley, mint, dill, basil, or green onion)

pomegranate seeds

small
radishes, cut into thin strips (a julienne grater works great)

toasted nuts (almonds, walnuts, pistachios, or any mix you like)

olive oil

lemon juice
Salt and pepper, to taste
For serving (optional):

cup
plain yogurt (to spread as a base)
Drizzle of pomegranate molasses
Instructions
If using yogurt, spread a thin layer on a plate or shallow bowl.
In a medium bowl, mix onion, herbs, radish, toasted nuts and pomegranate with olive oil, lemon juice, salt, and pepper.
Add avocado and toss gently to keep the cubes intact.
Top with a drizzle of pomegranate molasses.
