Ingredients

olive oil

garlic clove, very thinly sliced

olives (kalamata, green, or a mix), finely chopped
½-1
tbsp
balsamic vinegar (to taste)

tbsp
fresh herbs (e.g. za’atar leaves, oregano, thyme, basil)
Zest of ¼ lemon

tbsp
grated Parmesan (or other hard cheese)
Pinch of sea salt (optional, to taste)
Juice and seeds from 2 cherry tomatoes (optional, for freshness)
Instructions
In a small microwave-safe bowl, combine the olive oil and sliced garlic. Microwave for 30 seconds to infuse the oil and mellow the garlic.
Stir in the chopped olives, balsamic vinegar, fresh herbs (chop if using large leaves), lemon zest, Parmesan, and a pinch of salt if needed.
If using, squeeze in the juice and seeds of 2 cherry tomatoes and stir again.
Enjoy immediately with crusty bread, focaccia, or sandwich buns for dipping.
