(cashews, walnuts, pecans, almonds, hazelnuts, brazil nuts, pistachios, etc.)

Desiccated coconut
(for coating)
Instructions
Toast the nuts in a dry pan until fragrant, stirring often.
Mix the date spread, spices, salt, and toasted nuts in a bowl. If you don't have date spread, check the recipe tips for an alternative.
If the mixture is sticky, oil your hands lightly.
Shape the mixture into a log and wrap it tightly in clean film. I made a log with a 6 cm (2.5 inches) diameter, but you can make 2 smaller ones.
Roll the log in the coconut or your chosen topping (see tips for ideas).
Wrap it again in clean film and chill in the fridge for 2 hours.
Using a large, sharp knife, slice the log into discs, about 1 cm (½ inch) wide.
Store in the fridge or freezer and enjoy!
