½tspespresso powder (or flavoring of choice — vanilla, cinnamon, etc.)
For rolling & coating (optional):
Cocoa powder
Shredded coconut
Sesame seeds
Sprinkles or mini chocolate candies
Instructions
Remove the pits from the dates. Place them in a bowl and cover with boiling water. Let soak for 5 minutes, then drain well and allow to cool slightly.
Add the soaked dates, almond flour, cocoa powder, almond butter, salt, and espresso powder (or your chosen flavoring) to a food processor. Blitz until smooth and combined. Taste and adjust flavor if needed.
Transfer the mixture to the fridge for 15 minutes so it firms up, making it easier to roll.
With slightly damp hands, roll the mixture into small balls.
Roll each ball in your chosen toppings — cocoa powder, shredded coconut, sesame seeds, sprinkles, or mini chocolate candies.
Place in the fridge until ready to enjoy.
