button mushrooms, thinly sliced

garlic clove, thinly sliced

tsp
butter

tsp
olive oil

cup
cream
Grated cheese (Parmesan, Manchego, or similar)
1
tsp
fresh thyme leaves
A pinch of nutmeg
Salt and pepper, to taste
Instructions
Cook the pasta in salted boiling water according to package instructions, minus 2 minutes.
While the pasta cooks, heat butter and olive oil in a pan over medium heat.
Add the mushrooms and garlic, and cook until the mushrooms release their liquid and it evaporates.
Lower the heat and add the cream.
Season with salt, pepper, nutmeg, and thyme.
Add grated cheese and stir until melted.
Transfer the pasta directly into the sauce with a ladle of pasta water.
Finish cooking the pasta in the sauce until creamy and well combined.
Add more pasta water if needed to loosen the sauce.
Serve with extra grated cheese on top.

NOTES
Don’t rush the mushrooms - letting the liquid evaporate builds flavor
Use pasta water to create a silky, creamy sauce
Keep the pasta slightly undercooked before adding to the sauce
Don’t skip the thyme - it really brings everything together
