(like whole milk ricotta, creamy farmer’s cheese, or thick cottage cheese – blend if using cottage cheese)

Instructions
In a mixing bowl, whisk together the
soft white cheese
,
eggs
,
sugar
,
vanilla extract
, and a
tiny pinch of salt
until smooth and fully combined.
Add the
flour
and
baking powder
. Stir gently just until the batter comes together — don’t overmix.
Heat a nonstick pan over medium-low heat and add a little
oil or butter
.
Spoon the batter into the pan and gently flatten each one with the back of the spoon.
Let the fritters cook until the edges start to set and the bottoms are golden. Flip carefully and cook the other side until golden and cooked through.
Serve warm with your favorite toppings — powdered sugar, jam, fruit, whipped cream, or anything you like.
