In a Dutch oven or an oven-safe pot, heat the oil and sear the meat on all sides until browned.
Add the chopped onions and sauté for a couple minutes. (They will melt down beautifully as they cook.)
Add the soy sauce, 2 tablespoons of date honey, and sea salt, then stir for less than a minute.
Add the beer and 1 cup of water or stock, scraping up any crispy bits from the bottom. Cover the dish and bring it to a boil.
Place in the oven for 3 hours, checking after 1.5 to 2 hours to see if it needs more liquid. If necessary, add another cup of water.
After 3 hours, use a potato masher to break down the beef. Add 2 more cups of water or stock and taste. Adjust the seasoning, and if desired, you can add a third tablespoon of date honey.
Return the dish to the oven and let it cook for another hour.
