baking powder

vanilla extract
Pinch of salt
Butter, for cooking
Optional toppings
Maple syrup
Fresh fruit
Chocolate spread
Peanut butter

Instructions
Add the banana, egg, oats, baking powder, vanilla, and salt to a blender. Blend just until smooth. Do not over-blend.
Heat a non-stick pan over low heat and melt a small amount of butter.
Pour or spoon the batter into the pan to form pancakes, any size you like.
Cook on low heat for 2–3 minutes, until the pancakes look set and slightly puffed. Flip gently.
Cook for another 1–2 minutes on the second side, until cooked through and lightly golden.
Serve warm with maple syrup, fruit, or your favorite toppings.
