- Coconut Milk: I like to use coconut milk instead of coconut cream. Coconut milk not only makes the dish lighter and fresher, but it also pairs better with the fruit.
- Small Tapioca Pearls: They are the most fun thing to eat and have an amazing texture that you will love!
- Sugar: In this recipe, I use very little sugar, making it perfect if you don’t like overly sweet desserts. If you prefer it sweeter and don’t plan on adding any sweet toppings, feel free to add more sugar.
- Fruit: You can use literally any fruit you like or have on hand. I prefer a combination of sweeter and tangy fruits for balance.

Tapioca with Fruit and Coconut Milk
Ingredients
Coconut – Tapioca
- 1 liter water (about 4¼ cups)
- ½ cup uncooked small tapioca pearls
- ¼ cup sugar
- 1 cup coconut milk

Instructions
- In a pot, bring the water to a boil, then reduce the heat to a low simmer.
- Add the tapioca pearls and cook for 25-30 minutes, stirring every few minutes with a whisk to prevent sticking. Cook until there are almost no little white dots remaining.
- Turn off the heat, stir in the sugar, and cover the pot. Let it sit for 15 minutes.
- Stir in the coconut milk and let the mixture cool to room temperature (about 1 hour).
- Transfer to the fridge and chill for 2-3 hours.
- After chilling, the tapioca will thicken. Stir with a whisk and adjust the consistency to your liking by adding more water or coconut milk.
