- 1 ripe avocado, cut into small cubes (not too tiny – you want it to keep it’s shape)
- ¼ small red onion, finely chopped (about ⅓ cup)
- 1 small handful of fresh herbs – I used chives and cilantro, but parsley, mint, dill, basil, or green onion all work beautifully
- ⅓ cup pomegranate seeds
- 4–5 small radishes, cut into thin strips (a julienne grater makes it super quick)
- ¼ cup toasted nuts – almonds, walnuts, or pistachios are all great choices
- 1 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper, to taste
To serve:
- A base of plain yogurt (optional but adds the perfect creamy contrast)
- A drizzle of pomegranate molasses for finishing

How to Make This Easy Avocado Salad
- Prep the base – If serving with yogurt, spoon a thin layer onto a plate or shallow bowl.
- Mix the salad – In a medium bowl, combine the chopped red onion, herbs, radish, and pomegranate seeds. Add olive oil, lemon juice, salt, and pepper, and toss to coat.

- Score along the natural lines – you’ll notice faint ridges dividing the fruit (similar to orange segments). Use a small knife to make shallow cuts along these lines.
- Break it apart like you would an orange – into sections.
- Work over a large bowl of water – use your hands to gently separate the seeds underwater. The seeds will sink, and the white membrane will float.
- Skim and strain – remove the floating bits, then drain the seeds.
