These date rolls are just the thing.

Do you ever find yourself craving something sweet after a meal? Or need a quick energy boost before running errands? Trust me, date rolls are exactly what you need!
These little date treats are perfect for everything—snacks, coffee breaks, or even when you’re having friends over. They’re super quick to make, naturally sweet from the dates, and packed with toasted nuts and warm spices that bring the perfect mix of flavors and textures. The best part? They’re freezer-friendly, so you’ll always have a delicious snack ready whenever you want.
How I came up with this recipe
In our house, dates are a pantry staple. Ever since I can remember, we always had Medjool dates on hand. My mom would bake with them, put them in fruit salads, add them to slow-cooked meat stews, and more! My dad would take a date, open it up lengthwise, remove the pit, and replace it with some sort of nut—usually almonds. He would then dip it in tahini and date syrup, and there you have the perfect treat. I know it might seem too healthy to actually be delicious, and maybe it’s just my sweet memory talking, but honestly, it’s like the most perfect combo.
Creating these date rolls for my dad and his friends’ bike rides
Over the years, my dad developed this tradition with his friends where they ride their mountain bikes together every weekend. They are all foodies and at the same time very sporty. They have this tradition where, somewhere along the ride—after a big hill or some more difficult part of the ride—they stop and reward themselves. Usually, in front of a magnificent view, they make coffee or tea and enjoy it with something sweet. It became a tradition that my mom makes them her famous brownies (stay tuned for the recipe :).
Of course, nothing beats a good brownie.
Sometimes she doesn’t have time to make them, or they prefer something a little healthier. This is why these date rolls were created, and they are now on rotation with the brownies for the bike rides. My dad says that they are always a huge hit and are perfect for a boost of energy in the middle of the ride. They even suggested I make them with some peanut butter cup chunks for a nice creamy, nutty touch which I obviously have to try. I always love making my dad and his friends some treats. They are always so grateful and never forget to send me a nice group pic as a thank-you :).

You can create smaller or bigger logs and customize the ingredients to your friends’ liking. You can slice it nicely, wrap it with cling film, and tie a cute ribbon on each side. I know I would be happy to get it from a friend. There is nothing like a homemade gift, and if it’s edible, that just makes it even more perfect.
In this recipe, I’ll show you how to make an easy, no-bake treat that’s ready in no time. You’re going to love it!
INGREDIENTS
- Date Spread: Use store-bought date spread, make sure it’s 100% dates.
- Mixed Nuts: Choose a variety of your favorite nuts—the more, the merrier! They add incredible texture and richness to every bite. I used Brazil nuts, walnuts, pecans, pistachios, almonds, cashews, and hazelnuts. Toasting them in a dry pan enhances their nutty flavors and brings out their delicious aromas.
- Spices: The spices add an incredible aroma and depth, but don’t skip the salt—it really balances the flavor and brings everything together and keeps you coming back for just one more bite.
- Coconut: For the best result, use desiccated coconut to coat the rolls, giving them a perfect finish. In the next section I suggest other topping options :).
Date Rolls | Tips:
- Don’t have date spread? Simply use moist Medjool dates! Pit them and mash them well using a food processor for a smooth consistency.
- Toasting the nuts: Toast the raw nuts in a dry pan until fragrant, stirring frequently to prevent burning. Nuts can burn quickly, so keep an eye on them! This step fills your house with the most delicious smell, you will love it!
- Spices and add ons: Feel free to mix and match spices like cinnamon, ginger, cardamom, or pumpkin spice. A chocolate lover? Add a tablespoon of cocoa powder. If you’d like to make It sweeter, drizzle in date syrup, honey, or maple syrup. Make sure to taste the mixture and fix it to your liking.
- Mixing: Be gentle while mixing all ingredients together so the nuts don’t break. If the mixture gets too sticky, coat your hands or gloves with a bit of oil. This step may seem a little annoying, but it only takes a couple of minutes.
- Rolling: Once you mixed the mixture well enough, and you corrected the seasoning to your liking it’s time to shape the log. Create a thick log-like shape and place in a large piece of clean film. Shape it into one big log like I did, or split it into 2-3 smaller ones for more topping options. Also, think about the size of the discs you will end up with, would you like it wider with more nuts in each? Or more narrow so it’s a bite size treat?
- Topping Options: Coat the log in coconut like I did, or with sesame seeds (toasted or raw), almond powder, or cocoa powder for different flavors and textures.
- Cutting: Once the log is frozen, cutting it with a sharp knife is simpler. The log stays intact, and the nuts create a beautiful pattern in each slice.
- Storage: In the fridge: Keeps fresh for up to 1 week. In the freezer: Can be stored for up to 3 months. Simply slice as needed and return to the freezer if you’re not eating right away.

Date Rolls
Ingredients
- 500 grams date spread
- 400 grams mixed nuts (cashews, walnuts, pecans, almonds, hazelnuts, brazil nuts, pistachios, etc.)
- ¼ tsp salt
- ½ tsp cinnamon
- ¼ tsp ground dried ginger (or cardamom, pumpkin spice, etc.)
- Desiccated coconut (for coating)
Instructions
- Toast the nuts in a dry pan until fragrant, stirring often.
- Mix the date spread, spices, salt, and toasted nuts in a bowl. If you don't have date spread, check the recipe tips for an alternative.
- If the mixture is sticky, oil your hands lightly.
- Shape the mixture into a log and wrap it tightly in clean film. I made a log with a 6 cm (2.5 inches) diameter, but you can make 2 smaller ones.
- Roll the log in the coconut or your chosen topping (see tips for ideas).
- Wrap it again in clean film and chill in the fridge for 2 hours.
- Using a large, sharp knife, slice the log into discs, about 1 cm (½ inch) wide.
- Store in the fridge or freezer and enjoy!
