At first, I would completely mess them up in the pan—it takes a little practice—but lucky for me, they were still delicious. I remember my mom making these with either a light cheese filling with raisins, chocolate spread, or the simplest of them all—just butter and sugar. Now, I know the butter and crunchy sugar version might sound weird to you, and it probably is, but you can’t argue with food that holds a sweet place in your childhood memories.
This recipe is how my family has always made blintzes, with a little addition that was added over the years: instant vanilla pudding powder. It makes them taste really special and gives them extra elasticity, which also makes them easier to work with—so it’s a great recipe if you’re a beginner.

How To Make Blintzes 3 Different Ways
INGREDIENTS
- Instant vanilla pudding powder: This makes the batter more elastic and flavorful, improving both the texture of the blintzes (making them easier to flip and fill) and the taste. You can skip this step, but I recommend using it.
- Lemon zest: You can also use orange or lime zest. If you like, add zest to both the batter and the cheese filling.
- Cheese filling: For a lighter filling, use 5% fat ricotta cheese. I generally recommend using cheese with up to 10% fat and a texture similar to thick plain yogurt. It’s important to add instant vanilla pudding powder to the filling so it holds together well.
- Passion fruit sauce: This pairs well with any jam flavor you like, such as peach, cherry, raspberry, blueberry, and more!
- Figs, rosemary, and honey: I really like this combination, but you can substitute the honey with your favorite jam. The figs can be swapped out for peaches or apricots, which you can also roast in a pan for a few minutes.
- Chocolate spread: You can literally use any spread you like! Here’s some tasty inspiration: dulce de leche, Biscoff, peanut butter and jelly, or any chocolate spread you prefer!
How To Make Blintzes | Tips:
- Mix the batter thoroughly to ensure there are no lumps at all. You can even use a hand blender to make it extra smooth.
- Between frying the blintzes, melt a little butter and wipe it evenly on the pan with a piece of kitchen towel.
- A good indication for when to flip the blintzes is to wait until the edges change color. Flip them when they reach a golden-brown shade.
- If you don’t have a crepe pan, it’s easier to use a pan with short edges.
- You can make the blintzes in advance, along with the cheese filling. If you’re making the chocolate or fig and honey blintzes, I recommend warming them up in a pan for a minute on each side.
- For chocolate spread blintzes, spread a line of chocolate instead of covering the entire blintz. Roll the blintz in the same direction as the chocolate line.
- The cheese-filled blintzes can be heated up in a pan with melted butter for a delicious warmer serving.

- hand blender – the batter can be mixed with a whisk, but a hand blender is optional for making it extra smooth.
- Crepe Pan – a pan with shorter edges is just as good. My crepe pan is about 9.5-inch.

Blintzes
- 1½ cups milk
- 3 eggs
- 1 cup plain flour
- 1½ tbsp instant vanilla pudding powder
- pinch of salt
Cheese Filling
- 500 grams ricotta cheese
- zest of ½ a lemon
- ½ tsp vanilla extract
- 3 tbsp instant vanilla pudding powder
- 1-2 tbsp powdered sugar
Passion Fruit Sauce
- 10 passion fruits
- ¼ cup water
- ¾ cup sugar
Instructions
Blintzes
- Whisk together the milk and eggs. Combine with the flour, instant vanilla pudding powder, and salt.
- The batter should be smooth with no lumps. If necessary, use a hand blender for a smoother result
- Melt a little butter in a pan and spread it evenly with a paper towel to ensure the entire pan is buttered. Repeat after each blintz or every two.
- Pour ⅓ cup of the batter into the center of the pan. Wiggle and tilt the pan to spread the batter evenly.
- Flip the blintzes when the edges turn golden-brown, about 1-2 minutes. Cook the other side for another ½-1 minute.
- Remove the blintzes to a plate and stack them together to keep their elasticity and warmth.
Cheese Filling
- Mix together the cheese, lemon zest, vanilla extract, instant vanilla pudding powder, and powdered sugar. Start with 1 tablespoon of powdered sugar and taste. If you want it sweeter, add more. Remember—the passion fruit sauce or jam you’re using is also sweet. Make sure there are no lumps.
- Store in the fridge until ready to fill the blintzes. The filling can be made in advance.
Passion Fruit Sauce
- Empty the passion fruits, including seeds and juice, into a pot.
- Add the water to the pot and boil for 5 minutes.
- Reduce the heat to a light simmer, then add the sugar. Stir until completely dissolved. Cook for 10-11 minutes until the sauce is clear and shiny.
- Transfer to a jar immediately. Keep in mind that the sauce thickens quite a lot as it cools. If the sauce is too thick, you can add water and boil it again.
